What's for Dinner? Chicken Tortilla Soup

Another night at our house that my son and husband won't be home at dinner time - my son in going climbing with his Venture Group at Beaumont and hubby is helping  belay.   I'm sure they will be hungry and cold by the time they get home, so I'm making soup.

I follow this recipe fairly close - minus the olives, avocado and cilantro.  No one misses the olives & avocado in our family.  I love cilantro, but hubby doesn't like it very well, so I can live without it.  Besides, I can hardly stand to pay the price for it at the grocery store.

What's for dinner at your house tonight?

  1. I am doing Brunswick Stew with a green salad. I use Sirloin Tip Roast cut into chunks as my stew meat. It is so good. Also, making homemade Cinnamon Apple Rolls. Hope they turn out this time. Last time was an epic fail.

    Where are you buying cilantro that it is so expensive? Fresh is usually only .99 a bunch and what you don't use you can dry for the next time. And, fresh tastes so much better.

  2. I love fresh cilantro! I usually grow my own, but this year, it died after only a few uses.

  3. hubby is grilling chicken tonight! We'll probably have Artisan lettuce, too.

    Do they sell the Artisan lettuce at Aldi in STL? It's $1.99 for four heads (of good lettuce!). We really like it.

  4. Frozen pizza at our home. I am helping a girlfriend out and watching her middle schooler (sweet girl!) and thought I would be best covered making pizza. The girls all agree!

  5. Dinner tonight was a leftover McDonalds egg & cheese biscuit (took a long nap and didnt feel like making anything). Lunch was chicken tortelloni with cream sauce and caeser salad at Trattoria Brianca in Kirkwood - delicious and I used a 20% coupon.

  6. I made a big batch of chili today. We had some for dinner, there's enough left for another dinner plus we should have some for chili mac/baked potato or chili dogs. I used my 8.5 quart pot filled to the brim. I am in the market for a 12 or 16 quart stock pot so I can make even bigger batches! =)

    I know cilantos not that expensive, but everytime I buy it it wilts within a day or two. I guess I don't know how to keep if fresh longer.

    I haven't noticed Artisan lettuce at Aldi. I'll have to look for it.
