Menu Plan Monday - Week of 3/11/13



I've got a couple meals left over from last week.  It's amazing how many leftovers we have when our teenage son isn't home for dinner a few nights during the week.  He will usually eat the leftovers when he gets home, but I must have had too much junk food in the house to eat instead.

Monday: Corn & Cheese Chowder, Hard Rolls

Tuesday: Thai Green Curry Chicken, Rice, Peas

Wednesday: Taco Skillet Pie

Thursday: Grilled Teriyaki Marinated Chicken, Long Grain & Wild Rice, Frozen Veggie

Friday: Tuna Melts, Carrots Sticks, Apple Slices

Saturday: Grilled Burgers, Sweet Potato Fries

Sunday: Corned Beef  & Cabbage

  1. Jeri, We are having taco pie wednesday too! monday- baked potato and bbq pork sandwiches (One kid is getting braces put on today so key was soft and baked potato will make her happy)
    tuesday- chicken and rice casserole
    wednesday- taco pie
    thursday- unsure either leftovers or chicken enchilladas depends on mommys mood
    friday-grilled cheese and tomato soup

  2. Hi Cathy - I'm hoping Taco Pie is good. I would have hated to steer anyone in the wrong direction.

    Do you used canned enchilada sauce or make your own?

    I never liked enchiladas very well because I thought the sauce tasted like the can - I don't like to drink soda our of a can either. I found this recipe and really like it. Now, I need to think ahead and make a big batch and freeze the extra.

  3. Jeri, I do a very different taco pie. I fry my taco meat as I would for tacos. then in a pie plate I layer a tortilla, meat, cheese and then again finishing with a tortilla on top. top with more cheese and bake until it looks yummy and serve with sour cream. My kiddos love it. If I am in the mood, I will whip up some sause for the top but I rarely use canned anything here.

    1. I do something similar...its a mexican casserole. Just layer the tortillas/refried beans/meat/enchillada sauce/schredded cheese...repeat the layers and bake it untill its all gooey and melty and yummy!

      I'm making the Taco skillet pie recipe tonight...I had every ingredient in stock! I think it sounds great :) Thanks so much for the idea...the corn bread sounds yummy in this

    2. Jeri - No problem, I sometimes type comments and then dont send them, so I couldnt remember if I'd actually sent anything! Tuna melts still sound good :)
