I only plan dinner, so it makes planning easy.
No one in our family eats breakfast. I know, it isn't healthy, but when my teenager has to leave for school before 7:00 a.m., I'm lucky he's up and been in the shower. My husband and I resort to coffee.
My teenager eats school lunch and my husband takes leftovers for his. I usually snack on sometime during the day; fruit, cereal, soup - something quick and easy.
Weekends aren't much different. Teens don't get out of bed for breakfast and my husband and I eat whatever is easy. I remember the days when the kids were little and I felt like I spent my day in the kitchen fixing and cleaning up. There is hope for all of you with little ones - they do grow up and can fend for themselves.
Monday: Manicotti, garlic bread, green salad
Tuesday: Chicken Marsala with Linguine, peas, pineapple
Wednesday: Grilled chicken Caesar salads, pineapple
Thursday: Baked potato soup, green salad, orange slices
Friday: Pasta con Broccoli, garlic bread
Saturday: Hamburgers, fries, peaches (Eckerts from the freezer)
Sunday: Swedish meatballs with cream gravy, mashed potatoes, cranberry sauce, veggie

ReplyDeleteI tried the recipe I linked to a couple of weeks ago. My family liked it. But, I am going to twink a few things this time. Less chicken broth, more milk and I think I'm going to put the cheese in the soup before I serve it.
I've always wanted to try to make Swedish meatballs every since a trip to an Ikea store.

ReplyDeleteIkea was my inspiration too. The closest Ikea to St Louis is 5 hours away, so this recipe has to do for me when I get a craving for Ikea meatballs.

ReplyDeleteI made the pasta con brocoli and it turned out great! I improvised - bow tie noodles and half and half. Do you use cream and freshly grated parm or the canned parm?

Hi Maureen - I improvise everytime I make Pasta con Brocoli.
ReplyDeleteI don't think I've ever used cream, although it would make it good. I usually use 1/2 & 1/2, but have resorted to skim milk if that is all I have (I do add a little more butter if I'm using skim.)
I use frozen brocolli if I don't have fresh and what ever noodle I have. When I used the whole grain noodles they absorbed too much of the liquid, so I need to add more milk product.
And I aways use Kraft parm. for the can. Fresh would be good.
