Menu Plan Monday - 1/31/11


I'm calling this my Ice Storm Cometh Menu.  I don't think there is anything better than a pot of soup on the stove on a cold blustery winter day.

And, if we lose our electricity we'll eat ham sandwiches.   I might also check the sky for smoke coming out of a neighbors chimney.  I could try to barter a box of cereal for an hour or two in front of their fireplace.

Monday: Ham, baked potatoes, peas, fresh pineapple

Tuesday: Baked Potato Soup, apple slices with carmel

Wednesday: Senate Bean Soup, cornbread

Thursday: Ham & cheese omelets, hash browns, orange juice

Friday: Pasta con Broccoli, garlic bread, fresh fruit

Saturday: Swedish Meatballs with Cream Gravy, mashed potatoes, cranberry sauce, veggie

Sunday: Chili, cornbread

    Jeri that bartering the cereal for fireplace time was just to funny. =) And once again Yummy sounding menu. DH & I put in an emergency generator after that Huge summer storm a few years ago, it supplies the most important parts of the house (heat/air, refridge/freezer, TV and lights). I am sooo glad we spent the extra $ for it. I have gotta get out here and get a couple errands run before it starts. TTFN

  4. Hi Janet - I bought a ham instead of a generator. I'm thinking if I'm prepared for the worst, it won't materialize. Wishfull thinking I'm sure.

    You might want to check with Ameron. I heard on the new this morning that people who use generators should contact Ameron becuase you could send electity from you generator back through their line. A downed line they thought was dead could be live. I'm not sure I have that all correct, since we don't have a generator and I wasn't paying that much attention.

    If I am thinking correctly, when the electric goes out the generator comes on using natural gas. And I think there is no back flow through the main lines. But your statement makes me want to double check with Southwestern Electric, no Ameron over here. =)

  7. I am worried about losing power. I was thinking of making some hardboiled eggs, breaded chicken tenders. Picnic foods! LOL Something that doesn't have to be heated or cooked.

    We don't have a fireplace either.

  8. Okay, I don't have a ham, but I do have a porkloin. I am going to cook that and we can eat off of it a couple of days.

    Got a whole chicken out to defrost. I am all out of chicken breast.

  9. I've been having flashbacks of that ice store a few years ago. I was awake (pregnant lady who can't sleep). I heard a huge crack and my bedroom lit up. The transformer outside our house exploded. Awesome. We were out of power for about 4 days. This was right after, naturally, we had finally restocked our freezer from the summer power outage that lasted 8 days. Hopefully we keep our power this time!

    The best thing we ever did was buy a gas-generator the night before the '06 ice storm. 12 hours later, we were out of power for 3 days.

    Even w/out power, I can pretty much cook what I want between our little camp propane stove, my toaster oven & electric skillet. But I hope it doesn't come to that!!

  11. I am making Loaded Baked Potato Soup today. Have a pork roast in the crock pot for pulled pork and some snack type foods. I have a gas stove so I can still light it to heat things up. No generator here but the neighbor has one. We do have kerosene heaters.

    We should be find. But, everyone, remember to keep your four legged friends safe too. We are going to have some bad wind chills. If they go out on Ice Melt, make sure to clean their tootsie's off. Everyone stay safe and warm.

    I have a question about the Pasta con Broccoli recipe you linked to - do you use fresh or frozen broccoli in this recipe. It looks good and I am always looking for some vegetarian recipes to stretch the food budget. I think I will try it but was wondering what works best (fresh or frozen).

  14. Hi Rebecca - I've use either fresh or frozen broccoli. I prefer fresh, but I don't think frozen is bad in the receipe either.

    I substitue half & half or even milk for the cream. I might add a pat of butter if I use milk.
