I'm keeping my menu plan easy this week. My family has a busy week with thing to do and places to be. So, no time to cook - just get dinner on the table.
Monday: Black Bean Soup, Green Salad
- I like the idea of Meatless Monday, but the only meatless dish I know that my family will eat is Pasta Con Broccoli. Since my family loves soup, and black beans, hopefully this will be a hit. If you make Black Bean Soup and have a better recipe suggestion, let me know.
Wednesday: Chicken Marsala with Linguine (Macaroni Grill), Peas
Thursday: Pizza (DiGiorno)
Friday: Spaghetti (Ragu), Green Salad, Garlic Bread
Saturday: Hamburgers, Fries
- I'm hoping the weather will be nice enough to grill. If not, I'll have to pull out the George Foreman.
- I like to have a ham bone to use when making this soup, but since I only have ham in the freezer, I'm giving it a try without the bone. Hopefully it will be just as good.

DeleteHi jeri, I make a similar black bean soup, but without the carrots and celery (although I might try adding those next time). I serve it over white rice and top with sour cream and chopped hard boiled eggs (like they do at the Columbia restaurant in Tampa. Even my five year old likes it!

DeleteDo you puree some of your beans like this recipe calls for? I really don't like to dirty any more equipment than I have to.
I usually just mash some of the beans against the side of the pot with back of a wooden spoon.

ReplyDeleteWe had yummy Southwest wraps last night. We'll have pizza tonight (gluten free Chebe crust), and I also have Garlic Cheddar Chicken on the menu (among other items).
Hi Emily - Wow! Those Southwest Chicken Wraps do sound yummy. I din't bookmark that recipe, but printed it instead. When I bookmark recipes I tend to forget about them & I want to make sure I make this one.

DeleteWe liked the wraps! I must confess that I didn't really completely follow the recipe. I left out the beans and pepper. But I added salsa, and I used 4 oz. of cream in place of half of the shredded cheese. But, I generally always use recipes as a starting point...! :)
I haven't signed up for Pinterest. I've been on the stie a few times and am almost afraid of it. It looks like you could spend hours if not full days exploring the place.

DeleteJeri, A potato masher also works great to mash some of the beans. That's what I use when I make my bean with bacon soup.
ReplyDeleteI make a random weight watchers black bean soup recipe. Its super easy and can easily be doubled/tripled/quadrupled and frozen. It uses beans, broth, rotel, corn and bacon. YUMMY! I was thinking I should maek some again soon.
