Stockpile Recipe - Taco Skillet Pie

Shopping  last week with Super Double coupons was a lot of fun.

I stocked up on cornbread mix and black beans.  I'm going to put Taco Skillet Pie on my next menu plan.   I've not tried this recipe before, but it sounds like something my family would enjoy -  AND I have all the ingredients.


Taco Skillet Pie

Ingredients
1 pound lean ground beef
1 can (19 ounces) black beans with liquid
1 can (14.5 ounces) petite-cut zesty jalapeno tomatoes
1 package (1.25 ounces) mild taco seasoning
1 package (6.5 ounces) cornbread mix
2 large eggs
1/3 cup low-fat milk
1 tablespoon vegetable oil
1/2 cup Mexican-blend cheese mix

1. Heat oven to 425 degrees F. In a large ovenproof skillet, cook beef over medium heat until browned. Drain fat if necessary. Stir in black beans, tomatoes, and taco seasoning. Bring mixture to a boil over high heat. Cook 1 minute.

2. Prepare cornbread according to package directions using eggs, milk, and oil in the amounts shown in the ingredients list. Spoon cornbread onto hot taco mixture. Bake 15 minutes. Sprinkle top with cheese and continue baking 5 minutes or until cornbread is golden brown. Let cool 5 minutes before serving.

To me, a stockpile recipe calls for ingredients that are easily substituted. I want to use what I already have, and not run back to the store for a full-priced item.

Substitution possibilities
Ground Beef - ground turkey, ground chicken, or maybe even spicy sausage
Canned Black Beans - canned chili beans, or dried black beans you've cooked yourself
Zesty Jalapeno Tomatoes - regular canned tomatoes, and a can of chilis or a fresh chopped jalapeno
Taco Seasoning - make your own 
Corn Bread Mix - make your own
Mexican Cheese Blend - shredded cheddar

What did you stock up on this week, and how do you plan to use it?

I'm hoping lots of people will chime in with what they purchased, and what they are going to make with it.  Super Doubles has sparked a new interest in couponing.  It can be overwhelming to fill the pantry with food and not know what to do with it.

  2. I don't really have a recipe, but I bought a few packages of Johnsonville Italian sausage and our family likes to make small meat balls with them and have meat balls and peppers. Cook the small meat balls in a skillet and saute cut up bell peppers in another, once the meat balls are almost done, transfer in with the peppers to finish cooking (keeps most of the fat out of the dish). Season with salt/pepper. Serve over brown rice.

  3. Stir fry is the ultimate stock pile/use odds and ends in the fridge meal at my house. I usually serve over rice (noodles work too).
    A stew is great too: canned tomatoes, beans, any veg, rice or noodles or grain, etc.

  4. Tonight we did panko pork chops.. (used the -$1 pork Q that doubled on these). It was a panko pork chop using egg and dion mustard to make the panko stick.

    Side of boxed potatoes with Heinz mushroom gravy

    Side of "canned veggie casserole"...just use canned veggies layered with cream of soup and bread crumbs (also ritz or town house crackers is good with shredded cheese for this too)

    sauted up a thin sliced onion with terriaki/soy sauce and of all things...canned chunk pinnaple. This was for on top of the pork chops. It sounds strange but turned out really good :)

    Most of the ingredients were couponed :)

  6. I made Enchurittos (enchiladas burrito style) for the first time Sunday night after taking a new look at what I had after last weeks sales. It was pretty easy to prepare.
