Last week, my husband and I were practising being "empty nesters." Our oldest stayed on campus this summer and the youngest was away at camp.
How quickly we reverted to our former lives - you know, the life before kids. I don't think I looked at my menu plan once and it didn't work very well. Since I have a teen to feed this week, I'll have to do better.
Monday: BBQ chicken sandwiches, cole slaw, backed beans, strawberries
Tuesday: Grilled hamburgers, Ceasar Salad, fruit
Wednesday: Chicken Enchiladas, refried beans
Thursday: BLT's, green salad, chips
Friday: Italian beef sandwiches, chips, fruit
Saturday: Date night
Sunday: Tilapia, long grain & wild rice, veggie

I truly can't imagine (or remember) not having kids in the house...what is that like??? It has only been 4 years for us, but it feels like forever...in a good way- mostly.
