After a few week's of following my menu plan, last week fell apart. I didn't look at the families calender before I came up with the menu - a big mistake. There were several nights someone needed to be somewhere early in the evening. We resorted to frozen pizza and a fix what you can night.
But, I did fix Corn & Cheese Chowder. My family likes it so much, I'm going to fix it again this week. It makes a cheap dinner with a package $0.99 peppers from Aldi.
Monday: Corn & Cheese Chowder,
Tuesday: Leftover Slow Cooker Steak & Black Bean Chili, Fresh Pineapple
Wednesday: Grilled Cheese Sandwiches, Tomato Soup
Thursday: Baked Taco, Mexican Rice, Fresh Pineapple
Friday: Pizza
Saturday: Swedish Meatballs, Mashed Potatoes, peas, cranberry sauce
Sunday: Pork Shoulder Roast, Mashed Potatoes, Simple Oven-Baked Carrots

I wish i could do this. my husband is mexican so its like i cook up some meat beans and rice every night its rather boring . but looks like you have great organization . good for you!!
ReplyDeleteIve been able to cook up a few meals that last just me and the hubby all week. This week is Butternut Squash/Spinach/Sausage pasta [even cooked ahead the noodles for quick reheating!], Slow Cooker stuffed bell peppers, roasted carrots, and roasted green beans and mushrooms. Tonight I will actually roast a chicken in the Nuwave for a fresh chicken and use the leftovers for chicken tacos later in the week. and if you havent discoverd Nuwave Ovens yet ~ you might want to! Ive had mine for nearly 3 years and LOVE it!
ReplyDeleteI had tomato soup and grilled cheese for breakfast today (my meal times are a little weird and I dont like much traditional breakfast foods). Dinner will be pork cutlets and Velvetta au gratin potatoes. I'm working all week so thats the extent of my meal plan for the week, lunches at work and no dinners.
ReplyDeleteI love cold pizza for breakfast, but so does the rest of my family. I never seem to think about our leftover pizza before my teen gets to it.
DeleteWOW, same at my house, but it seems to also be a lot of left overs unless I hide it. Teenager boys are BIG eaters!!!!! I thought my girls ate a lot when they were growing. My son has put them both to shame.
