No, not leftovers (although, this soup does make for great leftovers.)  The idea of eating dinner at home fell apart last night.  My husband had a whole van load of kids to pick up to go climbing, and they drove through McDonald's on the way to Beaumont.  I wasn't going to cook just for me, so I opened  a can of soup.  At least, the chicken is thawed for tonight.

Remember: You want multiple coupons to use when a product is at a rock bottom price. When it's a good coupon insert week, I purchase 4 or 5 papers and sometimes acquire more. At first, I thought it was crazy to spend money to save money. But I've always saved much more than my investment.

I budget $5 per week to buy  items I'm going to donate to charity.  I've been focusing on food items because I'm going to donate my purchases to  Scouting for Food  in November.  The Boy Scouts can't make it any easier to donate when they stop and pick up at your door.

I hadn't bought any meat for a few weeks, so I knew that would need to be a priority this week. My $50 budget doesn't go very far when buying meat.

I had $10 left in my budget and planned on spending it on chicken, and then Schnucks ran the $5 Series Snack Pack deal.  I forgot all about my plans when I could pick up snack and soda for that price.

What's for Dinner? Chicken Tortilla Soup

Another night at our house that my son and husband won't be home at dinner time - my son in going climbing with his Venture Group at Beaumont and hubby is helping  belay.   I'm sure they will be hungry and cold by the time they get home, so I'm making soup.

I follow this recipe fairly close - minus the olives, avocado and cilantro.  No one misses the olives & avocado in our family.  I love cilantro, but hubby doesn't like it very well, so I can live without it.  Besides, I can hardly stand to pay the price for it at the grocery store.

The Magic House - FREE Family Night October 21st

FREE Family Night at the Magic House

The Magic House holds Target Free Family Nights every third Friday of the month from 5:30 pm to 9:00 pm.

These special nights enable a family (no more than two adults and four of their own children) to enjoy the more than 100 hands-on exhibits in the museum. Reservations are not required.

Parent teacher conferences are on our agenda tonight.   If you haven't been to high school conferences, they are a real waiting game. You stand in line to talk to the teacher - long lines.

At least the PTA sells pizza, cookies and soda so you can eat dinner while your waiting.  If my son doesn't go with us, he can throw a DiGirono for One in the oven at home.

Hopefully, my husband can sneak out of work early, so we can get to the school when conferences start at 3:00 and get home to catch the game. And, I might have to sneak out of the line to pick up a Shnucks' $5 Snack Series, good thing the school is right across the street from a Schnucks.

We have one of those evening at our house, so dinner needs to be quick and easy.

My youngest has an early evening activity and hubby is going to be the chauffeur after he gets off work.  Eating as a family has always been important to my husband and I, so we will wait until the evening activities are over, but youngest doesn't know that will be.  At least with this meal, if they call me when they are headed home, I can stick it in the oven and we can eat soon after they get here.
