We have one of those evening at our house, so dinner needs to be quick and easy.

My youngest has an early evening activity and hubby is going to be the chauffeur after he gets off work. Eating as a family has always been important to my husband and I, so we will wait until the evening activities are over, but youngest doesn't know that will be. At least with this meal, if they call me when they are headed home, I can stick it in the oven and we can eat soon after they get here.

Sad to say, but when we're really strapped for time, we usually hit taco bell. Ours has a nice park right behind it, though, so at least we can get some exercise after.
ReplyDeleteTonight - chili dogs! Got three cans of the twenty cent chili, a free pack of hot dogs from a couple months ago at SnS (frozen!) and the $1 buns at SnS. With oven fries from the Aldi potatoes. Dinner for 8 (but I'm only serving 2 and a half) for under four bucks. :)
When there's no time, we usually hit taco bell.
Breakfast for dinner at our house tonight. I baked a ham over the weekend, so omelets with peppers onion and ham plus some hasbrowns. Easy.
ReplyDeletewith so many children (5) and all of them in several activities we have sandwiches or frozen meals 3 days a week. Now as they are getting older I find them not home so much either so this year we started family sunday dinner. We require all five kids to be home and sit down for dinner on sunday evening and we go over the coming week schedules. tonight is one of those frozen dinner nights...
ReplyDeleteI just finished making a casserole for tonight: macaroni and cheese with diced ham, mushrooms, onions, and edamame (I also threw in some creamed corn I had leftover for some extra veggies).
ReplyDeleteAbout a year ago, I started where every time I make a casserole, enchiladas, lasagna, etc., I make 2, one for now, one for the freezer. It is very minimally more work to double the recipe and I love being able to just pull a casserole out of the freezer on days/night we are busy. It usually cheaper and healthier than buying prepackaged frozen meals.
If I have a lot of leftovers of something, but not enough for a whole new family meal, I will sometimes freezer smaller, individualized portions for lunches.

ReplyDeleteIt's just me at my house so my meals are usually spur of the moment, and I only have dinner on my non-work days. Dinner tonight will be salmon and Green Giant potatoes and snap beans.
ReplyDeleteTonight we're having a concoction of my husband's - hash browns and ground beef skillet dinner. We add pepperoni and cheese, and seasonings.
ReplyDeleteWe always sit down for a meal together - sometimes it's the only we see each other during a particular day! When time is short, we do crock pot meals (planned ahead) or leftovers.
Leftover potato soup for us. Can't wait!

Last night we had turkey tacos. Frozen ground turkey, can of black beans, can of corn and a OEP taco packet. Add some instant rice and roll in a tortilla. Fast, easy and everyone eats it.
ReplyDeleteLast night we had Roast Beef Sandwiches with Au Jus ( made in the slow cooker) plus a veggie. tonight, it will be roast beef, brown rice, gravy and buttered corn. If we still have leftovers on Thursday, I'll make a roast beef loaded baked potato
