Menu Plan Monday - Week of 1/16/12


My goal is to menu plan every week with what I have in the fridge, freeze and pantry.  This leaves me to spend my grocery money on the best deals, instead of what I need to buy.

Monday:  Ham, baked potatoes, green salad, pineapple
  • Aldi had $6 off their Spiral Sliced hams when I was there on Sunday.  I picked up a 9.8 lb. ham for a little over $10.  The use or freeze by date is this coming Friday, so I'm planning several ham meals this week and will freeze the rest. 
Tuesday: Ham Fried Rice
  • I picked up Sun-Bird Fried Rice Seasoning Mix last week at Shop 'n Save for very little money.  I've never tried this brand, but am willing to give anything a try at least once.
Wednesday: Senate Bean SoupPioneer Woman's Skillet Cornbread
  • I put a ham bone in with the beans when I cook them.  At times, I think my family only eats ham because they know I'll make bean soup with the bone.  This soup is definitely a family favorite.
Thursday:  Spaghetti, garlic bread
  • I don't do anything special with my spaghetti.  A jar of Ragu or Barilla pasta sauce and add some cooked burger or sausage.
Friday:  Chicken Fajitas
  • Aldi also has multi-colored peppers on sale this week.  I have the rest of the makings for fajitas at home.  When peppers go on sale, fajitas are what  we eat.
Saturday:  Chicken Marsala with Linguine
Sunday:  Pork tenderloin, long grain & wild rice, frozen veggies, homemade applesauce
  • Yes, third week in a row this meal is on my menu plan.  Even with my best made plans,  almost every week, some meal just doesn't happen.

  2. Mon: Lamb pita sandwiches(if I can't find lamb then steak. Think gyro style dinner
    Tues: Some sort of stir fry. I have peppers and chicken too
    Wed: Crock pot Tacos. That's always a busy day so we end up having tacos on wednesday. Plus everyone in my house will actually eat it and if you don't use a tortilla, my daughter can eat it too.
    Thurs: Pasta with sausage and lettuce. LOTS of lettuce mixed in a light sauce with the sausage makes pasta not so heavy.
    Fri: Tilapia and couscous. Once again, everyone eats it and its allergy friendly if I make brown rice couscous.

    I only Meal Plan of the work week. Weekends are always up in the air and so I never end up making what I plan so why bother?

    1. Hi Marcella - I understand not planning for the weekends. The meals that don't seem to happen on my plan are always on the weekends.

  3. Sounds like me- How many ways can I fix leftover ham this week? Soup is definitely on the menu!

    As a side note, the Aldi ham was surprisingly good! Tasted as good as the fancy (and much more expensive) name ones that I've had in the past. I wonder if they have any left- it would be nice to have a second in the freezer!

    1. Hi Kelly - I've bought hams from Aldi for several years and they are always our favorite. Although the one we had over the holidays was a bit too salty.

  4. I work 5 days this week so only 2 dinners at home, or fewer if I have lunch out. Will have leftover chili one night. Last night I made a talapia soft taco with stir fry veggies on the side. I rarely plan my meals in advance, whatever I have on hand and feel like eating is what gets made!

    1. Hi CJ - Oh, I think I can remember the days of being single. I always thought it was cheaper to eat lunch out and grab a snack for dinner than to go grocery shopping for the week.

  5. I love making all kinds of things with hams and ham bone. We just did that a few weeks ago ourselves. In addition, I know exactly what you mean about not always getting your meals in when you mean to...

  6. I like to grind ham and then make ham loaf (like meatloaf). Add some crushed pineapple or slices on top--yum. My family likes it too.

    1. Hi Sheryl - My mom used to grind ham and make hamballs with a sweet sauce on them. I haven't thought of those in years - until you mentioned ham loaf.

  7. The ham deal at Target with the Archer Spiral ham was good. We made Hoppin John with the ham bone for new years good luck. Is the Aldi ham as good as the Archer Ham.?

    1. I haven't had an Archer ham, but I think the Aldi brand is much better than Schnucks Spiral Hams.
