All the meals I put on my menu this week come from my pantry and freezer. The only thing I "need" to buy is fresh cilantro and a few perishables. I think I'll look for a cilantro plant, then I'll have fresh cilantro all summer. (If I remember to water it.)
Monday: Leftover BBQ chicken sandwiches, chips, apple slices
Tuesday: Breakfast for dinner - eggs, sausage, hash brown, o.j.
Wednesday: Frozen pizza, salad
Thursday: On the Border chicken tortilla soup*, fruit
Friday: Tacos, refried beans
Saturday: Bratwurst, fries, veggie
Sunday: Pork chops, Garlic Mashed Potatoes (Betty Crocker), veggies, fruit
*I found this recipe originally on the back of the On the Border Tortilla Chip bag. I'm using left over turkey instead of chicken because I have some in the freezer. Use whatever salsa you have and you don't need to puree it. Oh, and I'll skip the olives - no one in the family likes them but me.
