Menu Plan Monday - Week of May 24th

Thanks everyone who helped me out last week with instructions on how to cook a roast in the Crockpot to make BBQ beef sandwiches. I'm using the leftover beef to make burritos this week. Cathy sent me the instructions - shred the meat and put it back in the Crockpot with a can of tomatoes with green chilies. Serve with jack cheese in burritos. It sounds yummy. Thanks, Cathy.

And of course, we are having grilled pork steaks on Memorial Day. It can't be a summer holiday in St Louis without pork steaks. I'm not originally from St Louis, so I don't get the infatuation with them. They're fatty, though and have a lot of bones, but they are cheap. Someone from St Louis help me out here. Why does everyone love them, or is it just a guy thing?

Monday: Grilled Pork Steaks, corn on the cob, coleslaw

Tuesday: Burritos and green salad

Wednesday: Frozen pizza

Thursday: BBQ chicken sandwiches, potato salad, carrot sticks

Friday: Pasta Con Broccoli, salad, garlic bread

Saturday: Chicken enchiladas, refried beans (Old El Paso kit)

Sunday: Grilled pork tenderloin, salad, Long Grain & Wild Rice (Rice-a-Roni)

  1. LOL about the pork steaks! Every BBQ we go to has them too. Husband like them alot, I actually have a pack in the freezer just for him but I just prefer hamburgers!

  3. Pork steaks are not my favorite. Their fatty with very little meat. When I do cook them I try to get a good cut, sprinkle them with seasoning, grill them and then simmer them in BBQ sauce until their very tender.

  4. Tracy - I'll have to try simmering them in BBQ sauce. What a great use for all the BBQ sauce Schnucks paid me to bring home.
