Menu Plan Monday - Week of 1/10/11


Another busy week at our house, so Wednesday is fend for yourself night.  It's important to my husband and I that we eat dinner as a family, but every once in awhile, it's just not possible. Luckily, we've been able to keep those nights to a minimum.

Monday: Tacos, refried beans

Tuesday: Chicken Alfredo with linguine, peas, green salad, garlic bread

Wednesday: Fend for yourself night - soup, sandwiches, salad

Thursday: Breakfast as dinner -  eggs, sausage, English muffins, apple juice

Friday: Baked Chicken, baked potatoes, veggie, fresh fruit

Saturday: Out for dinner

Sunday: Fish, long grain & wild rice, green salad,

  1. I'm trying to do better with meal planning. I have this week planned out:

    Sunday: Spicy Asian Noodles with chicken and a side of snow peas and mushrooms
    Monday: Pasta with Asparagus, Pancetta and Pine nuts with a salad
    Tuesday: Italian Sausage and Potato Roast with salad
    Wednesday: Kung Pao Chicken with Coconut Jasmine Rice
    Thursday: Lamb meatballs with couscous and Feta
    Friday: Grilled Polenta with Spicy Flank Steak
    My husband wants to switch out one night for Salmon BLTs so one day will change later in the week.

  4. That's why my budget is way high. plus all my food allergic children with vegan or soy or gluten free everything. I aspire to a small budget but it ain't happenin'.

    Also I have subscriptions to Real Simple and Cooking Light so we've expanded our horizons. At least my husband and I, its hit or miss with the kids naturally.

  5. I started using the baked chicken recipe you posted & I love it! I bake the chicken & the kids eat it that way, but we also shred it for other things like enchiladas, chicken pot pie, jambalaya. Thanks Jeri! :)
