Menu Plan Monday - Week of 1/23/12


I must have planned a little better last week.  It was the first week in a long time that we actually ate every meal on my menu plan. 

Monday:  Baked Chicken, Mashed Sweet Potatoes (Betty Crocker), Fresh Pineapple
  •  I stock up on bone-in chicken breasts when they go on sale for $0.99 per pound.  There are usually 3 very large breasts per pack, so it is plenty for dinner (even with a teen-age son) and leftovers for lunches.
Tuesday: Baked Potato Soup, Fresh Pineapple
  • I have some russets in the pantry that need to be used.  I'll bake them on Monday with the chicken.
Wednesday: Breakfast Casserole, Orange Juice
  • I bought three hams over the last month to six weeks.  Quite a bit of it ended up in the freezer.  I'm going to put some kind of ham dish on the menu each week. 
Thursday:  Leftovers
  • My husband will be gone for dinner.  There should be more leftovers this week than what we will use for lunches.  My son and I will clean out whatever is left in the fridge.
Friday: Biscuits & Sausage Gravy, Orange Juice
  • This is one of  my son's and husband's favorite dish, and probably one of the most unhealthy dishes we eat. 
Saturday:  General Tso's Chicken (Kahiki), Steamed Rice, Broccoli, Fresh Pineapple
  • I'm hoping fresh broccoli will be on sale somewhere this week, and if not, I'll use frozen.
Sunday: French Bean Cassoulet
  • Beans are the only thing on this week's menu that need to buy.  I've saved a ton of money planning my menus from what I already have on hand, and spending my grocery budget on what's on sale.

  1. I like your new plan of eating what's on hand and saving the budget for sale items of the week. I'm sort of doing my pared down version of that. I have the stuff on hand for shrimp curry and our peppers need to be eaten NOW. So, that's what's on deck for tonight.

    We had a leftovers night one night last week so our tilapia and couscous dinner will be tomorrow. The rest of the week is up for grabs so my planning begins on Wednesday this week.

    1. Hi Marcella - It's so much easier to menu plan with what you already have - limited selection compared to the grocery store. My stockpile isn't that big.

      When certain items go on sale, I know what we will eat the following week.

    That is the exact potato soup I've been making for years (from a Quick Cooking magazine). We just had it last night. You may know this by now, but broccoli is on sale @ Dierbergs this week.

    1. Hi Kelly - No, I didn't know broccoli was on sale at Dierbergs this week!

      I don't live close enough to a Dierbergs to get the ad in Monday's paper, so I requested the ad be sent by mail. I'm lukcy if my mail carrieer delivers it before the week's over, even though it has a deliver by date on it.

      Are mushroom on sale too? Past con Broccoli next week if they are.

  3. I like to have a full pantry/freezer that I can cook out of--it helps on the weeks when I am feeling tight on money, or if an unexpected expense comes up! I also should consider more breakfast for dinner meals--the kids love those, and they are relatively cheap. Thanks for the ideas!
