My husband and I are practicing being empty-nesters this week - both kids are at camp. Actually, it was harder to come up with a menu because I didn't have to think about the kids favorites. We must have a lot of practicing to do if it's this hard to menu plan without them.
Monday: Fajitas, chips & salsa
Tuesday: Burgers on the grill, 7 Layer Salad
Wednesday: BBQ Chicken sandwiches, cole slaw, fruit
Thursday: Tilapia, long grain & wild rice, grilled veggies
Friday: Date night!
Saturday: Grilled pork chops, grilled veggies, fruit
Sunday: Spaghetti, garlic bread, salad

Oh, to be able to menu plan without the thought of children. I have to think about what I can get together quickly because my 5 year old is instantly starving 10 minutes before it's ready. To be able to cook and eat leisurely - is it a dream or just some distant memory??
ReplyDeleteAlgebra Teacher - Oh how I'm looking forward to this week without kids. I couldn't believe that it took me so long to come up with a menu. I think there will be a lot of adjusting to do when the kids are gone.
ReplyDeleteThat 7 layer salad looks similar to something a lady from church regularly makes for bring and share meals. Only hers also has a layer of sliced hard boiled eggs.
