Menu Plan Monday - Week of 1/30/12


Every week, I challenge  myself to come up with a menu plan with ingredients I already have in the house.   The only thing I need to buy for this week's menu is spicy sausage. 

Monday: French Bean Cassoulet
  •  This was on last week's menu, but didn't happen.   I love this type of recipe where you throw everything into the Crockpot and let it do it's magic. 
Tuesday: Pasta Con Broccoli, garlic bread
  • Broccoli & mushrooms were on sale this past week at Dierbergs and that means Pasta Con Broccoli will be on our menu.  
Wednesday: Turkey Tetrazzini
  • I have some frozen turkey from the holidays that needs to be used.  The recipe calls for chicken, but I always use my leftover turkey for this recipe.
Thursday:  Spicy Sausage and Cauliflower Soup
  • This is another recipe where I let the produce that is on sale determine what I put on the menu. 
Friday:  Ham Fried Rice
  • I fixed this dish a few week's ago with the Sun-Bird seasoning mixes I picked up at Shop 'n Save for almost no money.  My family liked it a lot.  Not quite as good as carryout, but close.
Saturday:  Pork Tenderloin, Grilled Cauliflower, Homemade Applesauce
  • I put my grilled cauliflower in the oven instead of on the grill. 
Sunday:  Chili,  Pioneer Woman's Skillet Cornbread
  • I fixed  Pioneer Woman's Skillet Cornbread for the first time a few week's ago.  I loved the texture of it, but prefer my cornbread a little sweeter.   I might try to add some sugar to the recipe.  Hopefully it won't mess it up by doing that.

    1. You're welcome. Cauliflower is one of my families favorite veggies. I wish it was on sale more often.

  2. I recently got a Redi Set Go grill and have been experimenting with it. Cornbread, omlets and grilled cheese turned out great. Meatballs did not, but I think it was because I substituted creamy rice soup for the egg and milk. Its a fun little gadget :)

    1. I hadn't heard of Redi Set Go Grills before. I just googled it - I could see how that could be a handly little gadget.

    2. Jeri - I'd watched the infomercials for a couple years and wanted one but wouldnt pay the $35 shipping charge. I ended up getting it for free using my Discover Cash Back. It's really handy for me since I only cook for myself.

  4. I have been wanting to try that grilled cauliflower since you posted it a few months back. I bought some yesterday and i am putting it on our menu this week too! Thanks Jeri!

    1. Hi Cathy - Let me know what your famly think of it . I divide the head of cauliflower into two foil packs and still bake it about 40 minutes. You'll begin to smell it and you will know it's getting done.
